Beef and Cheddar Casserole

It's been a crazy couple of days.   Last Thursday night I organized a huge group to go to Paint Night which was so much fun.  Friday night went to a friend's birthday party and Saturday went out with a group of parents from school for drinks.  I paid for it all day yesterday -- could barely move!

The one thing I did do yesterday was prep dinner for tonight using this recipe for Beef and Cheddar Casserole.  I substituted the beef for ground turkey and used plain greek yogurt instead of sour cream.  Tried a quick bite and it was DELISH and very easy to throw together.  Kids are going to love it.

My big excitement is one huge project at work is reaching the finish line this week.  It's been a year in the making and I am so relieved to have it get off my plate you have no idea.

And the biggest most exciting thing ever is I am the flipping-out-excited holder of tickets to Guns 'N Roses in July.  I do not remember the last time I was so excited about something.  Bucket list material. :)
