Sunday Dinner - Beef Brisket

Had a nice quiet day capped off with a delicious dinner.

Grammy's Beef Brisket

4-lb flat-cut beef brisket (mine was a little less and it made enough for leftovers)
2 t. salt (didn't use)
1/2 t. pepper
1 clove garlic, minced
3 onions, thickly sliced
1 c. hot water
2 T. cornstarch
1 c. cold water

Place brisket flat-side up in an ungreased roasting pan.
Sprinkle with salt, pepper and garlic; add onions.
Bake, uncovered, at 350 degrees for one hour, or until onions turn lightly golden.
Add hot water to pan; cover pan tightly with aluminum foil.
Reduce oven to 300 degrees (whoops - just realized I didn't do this!) and continue baking for an additional 2 hours.
I added carrots and potatoes at this point to complete the meal.
Remove brisket and onions to a warm serving platter. 
To make gravy, combine cornstarch and cold water; stir into juices in roasting pan.
Place pan on burner on top of stove until gravy thickens, stirring constantly.
I served this with a salad - delicious.
