Perfect & Easy Apple Crisp

WHAT a weekend!   Friday night I went to visit a friend -- we hung outside with a big fire pit and some wine.  It was good to catch up.

Saturday was insane.  9 AM my big guy went to piano and I took my middle one (and the little one) to soccer.  Noon my oldest had football practice and 2:00 a soccer game.  The football coach sent an email yesterday evening asking to do practice every Saturday and then games every Sunday.  I sent him a note and was like um, hell no!!  Do the practice right before the game please.  Thankfully he sent out a note to all the parents just now switching it to my request. 

I walked into my house and my family was over for our annual Fishfest (my brother and husband go to Arthur Ave for tons of seafood, fresh pasta, bread, etc.) and poker night. 

This morning we had 9 AM football practice followed by a game.  We were done by 11 and went apple picking.  The kids had fun.  I made an incredible easy and amazing apple crisp.
I think it was one of the best I have made and it came together in 10 minutes.  I recommend it!

Preheat oven to 375 degrees F. Lightly grease an 8-inch square baking dish. 
Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving
 
I didn't take a picture.  It came out of the oven and was gone about 15 mins later!
