New Years Day Dinner

After six days at home we all finally ventured out into the world today and went out for breakfast.  

After breakfast I dropped all the men off at home and ran out to do some errands.  Rest of the day was spent endlessly fixing train tracks for the new set my big boy got for Christmas.   

I made the traditional New Years Day dinner that is supposed to bring luck - pork and black-eyed peas.

I made up my own concoction and it came out great.

Sauerkraut, a sliced apple, one onion quartered, sweet potatoes on bottom of roasting pan.  Sear pork roast until brown on both sides then place on top of vegetables.  Sprinkle a tiny bit of brown sugar on pork then I used the rest of the sparkling apple cider from last night and poured it over everything.
Cover with foil and put in 350 until cooked through.

I am not a fan of black-eyed peas, but these were great.  My kids loved them.  I did a spin on baked beans and put some ketchup, brown sugar and some dijon mustard in a pan - mixed together to make the sauce and then mixed black-eyed peas in and heated through.  Good stuff!
