Meatless Monday's Potato Crusted Spinach Quiche

Went out with my middle guy to Christmas Tree Shops in the morning to get a little rug for the back door to catch all the snow/mud and a mat to hold all the boots so they drip dry.

My mom mentioned my Dad told her there was a free train event at the county center, so my husband took all 3 for a bit.  While they were out I cleaned and cooked.

Tomorrow's dinner of Spinach Quiche with Potato Crust -- I used homemade mashed potatoes.
Will heat up and serve with a big salad tomorrow.



And tonight's dinner of lemon cod, salad, potato wedges and that recipe all over facebook for the
"Best Broccoli of Your Life".
 

The cod was excellent and I don't even like fish that much.  The kids usually devour fish and all 3 decided today to revolt, but ate everything else.  The broccoli was fine, but not the best broccoli of my life!

We're resting now and watching Hotel Transylvania.  Goodnight!
