Jack-O-Lanterns and Melrose Place Stars

Had a so much with my three little guys and my oldest's friend yesterday.  We went to the park, out for Chinese food dinner and then to the Blaze.


I went with a bunch of people from town and at one point turned around to say something to someone and instead wound up staring right at Andrew Shue who was there with his family.  Saw him a few months ago walking in the city too!


My son's friend's family went down to the shore for the weekend so we had our first sleepover.  At 11:30 pm when I heard the sound of scotch tape being pulled over and over I went into their room to put the kibosh on everything and told them to settle down.  Needless to say my oldest is exhausted today.

Taking it easy today to recoup.  Made chocolate banana muffins, banana oat bars and tomorrow's dinner of chicken and rice.  I have some sundried tomatoes I have to use up so soon will start tonight's dinner prep of chicken with sundried tomatoes.  Few more loads of laundry and that's about all I can handle today.

Looking forward to getting the middle one out of here soon since he has football and the three of them together can be a quick drive to the nut house!!

Pinterest Weekend

It's gonna be a pinterest weekend!  I have been busy pinning lots of goodies so plan to try some of the new recipes I have earmarked -- specifically new recipes for pumpkin chocolate chip cookies, muffins and more!

I moved pumpkin carving to later in the week so instead tonight me and my three boys are going to attempt to make this pinterest craft.

I bought the exact house on amazon, but I am sure it'll look nothing like this in the end -- but we'll give it out best shot!

Because I like to use my blog to capture special moments as a diary of our days I have to say that my day was just brightened with a unexpected email from my youngest's teacher.  Her note below. I am a proud mama. :)

"Just wanted to tell you how well Joseph is doing in class.  He is a joy- and is a wonderful child.  He listens, plays, participates and does everything with a happy smile.  It is a pleasure to have him in class!"

Recipes for Leftover Halloween Candy

Why, why, WHY can't it be the weekend already?! UGH!

Looking forward to some Halloween fun this weekend.  Friday night plan to carve our pumpkins with my boys.  Saturday I am taking all 3 of them to the Great Jack O'Lantern Blaze.  We are going with a bunch of families from town so we plan to tailgate beforehand which should be fun!  I ordered some blue light stick necklaces and bracelets to load them up with so I can keep track of them in the crowd.

I love Halloween in our town, but I am not looking forward to three bags full of candy the day after. To help it move out of the house quicker I will often make some desserts using the candy -- and even sneak in something healthy -- think it was last year I made a banana cake with chopped up chocolate.   I also love to melt milky ways and other chocolates in milk to make hot chocolate for the kids.  I wanted to share this link that I found on Pinterest that has additional ideas for recipes for leftover Halloween candy.  Enjoy!

Apple Cinnamon Quinoa Oatmeal

It's chilly in NY!   I have on tap to make this weekend Apple Cinnamon Quinoa Oatmeal.   I usually buy a version of this on my way to work when it is cold, but remembered today I have a huge bag of organic quinoa at home so may as well try to make it myself and portion it out for the week. Looking forward to trying it.

Weekend is filled with football (again!) - tonight and Sunday for a few hours.  REALLY excited for tomorrow night for a fun get-together out on the town with some friends.   Hope everyone has a great weekend.

Pumpkin Cornmeal Cakes

I have organic cornmeal in my fridge for eons and several cans of pumpkin so these pumpkin cornmeal pancakes will be on the menu to fill my little men up before they hit the field for football Sunday!

Looking forward tomorrow to having a Halloween kick-off party for my little men and some of their friends.
